Does anything get printed out to the Console application (in
/Applications/Utilities) when you try to load a web page containing QuickTime
content?

Is the QuickTime plug-in listed when you go to the "Help" menu in Safari, then
select "Installed Plug-ins"?

You might try re-installing QuickTime 7.2.  http://www.apple.com/quicktime/
