I think is doable as long as you take into account out minimum dependencies policy: https://trac.webkit.org/wiki/WebKitGTK/DependenciesPolicy

- If using OpenSSL3 is optional (one can fall-back to libgcrypt with a CMake option) then I see no issue adding it, as old distros can opt to build with libgcrypt like they are doing now.

- But if using OpenSSL3 will be mandatory then we need to wait until the oldest of the distros that we support ships OpenSSL-3
