Basically, the large open source projects have the equivalent of a "nightly build", but it has almost nothing to do with the release timing. It's just the result of whatever work was committed that day. As for why Apple does stuff differently, it may just be a https://www.primeassignment.com/do-my-assignment preference. This is how things have been done forever, and it's only recently that Chrome and Firefox started doing things differently.
