Ben, this one is very curious...

Question - are you running any foreign binaries in Safari?  any "extensions" or
the like?
Also, "Cocktail" which is like a tweak-ui for OSX that does alot of advanced
preferences causes what seems to be the same crash log as yours - see
http://bugzilla.opendarwin.org/show_bug.cgi?id=10602

In that case, the user's ~/Library/Safari/Icons directory was chmod'd to not
allow the user write permissions.  

Lemme know on these questions, and check the permissions on that directory. 
Also, whether or not the permissions on that directory are okay, blow it away
and let the new icon database start over.
